Eggs at the Cortelyou Greenmarket

The Cortelyou Greenmarket is open as usual tomorrow – it runs year-round on Sundays, 8am to 3pm.

This week while planning my shopping list, I’m thinking about eggs. They’re one of my favorite proteins — inexpensive, versatile, and long-lasting (they usually keep in the refrigerator for about three weeks). If I know I might not be able to make it to the Greenmarket for a week or two, you’ll often find me picking up two dozen at a time from Jorge or Knoll Krest.

In a few weeks, some of you will be dying them for Easter, so before you can get burnt out on hard-boiled eggs, how about some recipes for eggs in other forms. We like to try to recreate Mimi’s shakshuka; a pretty quick egg drop soup is great in the winter; and really, does anyone stop eating ice cream when it’s cold out? What are some of your favorite egg recipes?

Don’t forget to save all those egg shells for compost! Every week, you can bring food scraps to the Greenmarket to be composted between 8am and 1pm. Also, textiles can be recycled from 8am to 2pm.
