The Secret to Mimi’s Hummus

Like so many of the best recipes, it turns out there’s not too much to the hummus at Mimi’s. The most complicated step, according to this recipe she provided to the Wall Street Journal, is soaking the dried chickpeas–beyond that it’s really simple. Though with more than one hummus on the menu at Mimi’s, you’ll still need to go in to ask her for tips about trying to make those at home. (Thanks to reader Spanky Tomato for the tip!)

In addition to this, Purple Yam recently shared their chicken adobo recipe with Cook’s Illustrated (also surprisingly simple), and America’s Test Kitchen (same folks as CI) tried to recreate Di Fara’s pizza. Are there any other local dishes you’d want to have a recipe for?
