Make Macaroons Like Buttermilk Bakeshop’s Katie Rosenhouse

Katie Rosenhouse, the baker behind local sweets spot Buttermilk Bakeshop (339 7th Avenue), recently shared a delicious recipe for chocolate-dipped coconut macaroons on Howcast, and it’s just the thing for any last-minute baking you might need to do for gifts or parties.

“It’s probably one of the easiest cookies there is,” she says in the video, and it sure looks that way — you just stir everything up by hand (only seven ingredients total for this, if you dip them in chocolate and sprinkles), there’s a little bit of messiness (but the fun kind!), and the total time is probably an hour start to finish, even if you’re as baking impaired as we are.

Feeling a bit more ambitious? Chef Rosenhouse also made some videos that can pack a dessert platter, showing how to whip up chocolate sea salt caramels, caramel chocolate marshmallows, Reindeer Chow, thumbprint cookies, buckeyes, no-bake cookies, peppermint bark, double chocolate snowcap cookies, hot chocolate cookies, linzer cookies, meringues, cranberry pistachio shortbread cookies, gingerbread men, and sugar cookies. Whew. Our teeth hurt a little just thinking about all those, but man, they hurt so good.

Or, if this all sounds like a crazy idea at this point, the bakery will be open on Christmas Eve, Wednesday, December 24, from 8am to 7pm, so they can do the baking for you. They’ll have some items from their holiday menu available for last minute in-store pick up.
