It’s Pizza Squared, With A Second Location For Emily Coming Soon
Soon there will be twice the pizza to love Emily.
That’s right: Matt and Emily Hyland will be expanding on the success of two-year-old Emily (919 Fulton Street) to open a second pizzeria and bar, named Emmy Squared — a reference both to the new shop’s planned specialty of square-shaped pan pizza and the algebra term for multiplying a number by itself.
However, this won’t be the Sicilian squares us Brooklynites are used to, Hyland told Grub Street New York. Instead, it will be inspired by Detroit-style pizza, which is typically “cooked in a pan, the sauce is robust and ladled on top of the pie (sometimes after baking, but not always), and there’s a crisp-cheese edge.”
The Emmy Squared version will be a riff on that, with a “closely guarded secret” cheese blend on your choice of red pie or white pie with caramelized onions and ricotta.
Grub Street notes that there will also be Italian sandwiches such as chicken, meatball, and eggplant parm, an Italian combo, rotating specials, and smaller snacks like mozzarella sticks and zeppoles.
“In this general area, there’s not a go-to delivery spot. As our restaurant has evolved over time, there’s seemed to be a demand for that,” Emily says. “We want to be that really awesome, high-quality pizza to go, as well as a place to get your sandwiches or drink a beer and watch the game.”
Emmy Squared will be located three stores down from Emily, in an old Subway sandwich shop, and will be helmed by the Hylands and chef/partner Lou Tomczak, formerly of Paulie Gee’s. The design will mix 80s pizzeria decor with bar-style seating.
