Get Cozy Tonight and Celebrate National Homemade Soup Day

February 4 is National Homemade Soup Day. With the forecast calling for temps in the mid-20s tonight (sprinkled with a little snow), it’s a great excuse to whip out some of your favorite recipes.

Need a little inspiration? AllRecipes has an amazing Italian sausage soup that has become a staple in our house:

1 pound Italian Sausage
1 clove of garlic, minced
2 (14 ounce) cans of beef broth (Make sure it’s low sodium, otherwise the soup will come out too salty.)
1 (14.5 ounce) can of Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can of Great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach packed, rinsed, and torn
1/4 teaspoon of ground black pepper
In a large stockpot or dutch oven, brown sausage with garlic. Stir in broth, tomatoes, and carrots. Season with pepper. Reduce heat, cover, and simmer for about 15 minutes, or until carrots are tender.
Stir in beans with liquid, and zucchini. Cover, and simmer for another 15 minutes, or until zucchini is tender.
Remove from heat, and add spinach. Replace the lid, and allow the heat from the soup to cook the spinach leaves, about 5 minutes.

This is a GREAT dipping soup, so it’s always a plus to serve with your favorite garlic or Italian bread.

Soups are the best, because you don’t have to be a world renowned chef to pull something delicious together. Best of all, there’s generally enough left over for lunch the next day.
