Dale Talde Expands Mini-Empire by Joining Thistle Hill

In what seems like not such a big surprise, Dale Talde has become the chef and a partner at Thistle Hill Tavern on 7th Avenue. The Top Chef’s new and much-talked-about local restaurants, Talde and Pork Slope, are run with the same Thistle Hill team of partners John Bush and David Massoni, so it seems natural that they’d add Dale to Thistle Hill.

His first order of business, according to the Times, was to replace Rebecca Weitzman and her Mediterranean menu with Kerwin Chu as executive chef, and to create dishes that are more the Dale style: for instance, where the mussels once had pancetta and saffron butter, they’re now tossed with Italian sausage in a Kelso beer broth. While you have to take them with a grain of salt, reviews of Thistle Hill on Yelp have seemed a little worse overall than when the restaurant first opened in 2010. This new change will certainly bring some curious eaters, and perhaps the previously disappointed diners, into the space – do you think you’ll go try it soon?
