Choyster’s Raw Bar To Open In Late February


We’ll have to wait a bit longer for raw oysters and a cooked seafood dishes at Choyster’s Raw Bar, which owners say will open in “about a month” — so, by the end of February.

Owner Thierry Cabigeos also told us that interior renovations are coming along at the 214 Greene Avenue (between Grand Avenue and Cambridge Place) space that formerly housed Choice Greene market.

According to a city Department of Buildings permit granted today (January 23), the current work being done seems to be on the plumbing.

As Cabigeos said last year, the restaurant will be decorated with “a lot of leather” inside and an herb garden and seating in the back garden. The menu will include a raw bar featuring oysters, as well as lobster and crab rolls, artisanal cheeses and charcuterie options, sandwiches from sister establishment Choice Market, and salads – but no cooking, as the premises does not have adequate ventilation.

According to Brownstoner, the bar will be open from around 5pm to 3am.

Besides Choice Market, Thierry is also the proprietor of Bed-Stuy’s ever-popular Dough Donuts.
