Backyard Chicken Egg-stravaganza
It’s the high-season for eggs, which the New York Times explains in a nice feature about what backyard chicken-keepers are doing with all the extras.
“In the last month, backyard chickens across the country have begun laying again,” they write. “Left to their own rhythms, hens slow down or stop laying eggs altogether in the winter, because their reproductive cycle is linked to daylight.” It’s one of the reasons eggs are so greatly associated with spring holidays.
So for all you folks keeping chickens in your backyards, and all those who take photos of them, or have them as neighbors–or just those of you dying up a dozen for this weekend–what do you do with all those eggs? Got any favorite recipes?
